Ingredients

  • 6 pork chops, 1/2-inch thick or butterfly
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1 tablespoon butter
  • 1 beaten egg
  • 1 1/2 cups toasted bread crumbs
  • 1/2 cup cooked corn
  • 2 tablespoons chopped pimento
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • dash of pepper

Instructions

  1. Cut a pocket in each pork chop or use butterfly chops.
  2. Season the cavity with salt and pepper.
  3. In a skillet, melt butter and sauté chopped green pepper and onion until tender.
