Cornbread And Greens
Ingredients
- 2 c. organic cornmeal ⓘ
- 2 t. baking powder ⓘ
- 1 bunch mustard greens ⓘ
- 1 bunch turnip greens ⓘ
- 1 T. olive oil ⓘ
- 1/2 t. honey ⓘ
- 1 t. turbinado sugar
- 1/2 t. salt
- 1/4 c. unprocessed oil ⓘ
- 1/2 c. boiling water ⓘ
- 1/2 c. buttermilk or plain yogurt ⓘ
- 2 eggs, beaten ⓘ
- 2 T. butter ⓘ
- 1 bunch kale ⓘ
- 1 medium turnip, cubed ⓘ
- 1 medium onion, chopped ⓘ
- 1 red bell pepper, chopped ⓘ
- 4 cloves garlic, chopped ⓘ
Instructions
- Preheat oven to 350°.
- In a large bowl stir together dry ingredients.
- Add oil and boiling water.
- Stir well.
- Add buttermilk and eggs, stirring until smooth.
- Stir in an additional 1 to 2 T. buttermilk if batter seems too thick.
- Place butter in an 8x8x2 in baking pan or a large cast iron skillet.
- Heat in oven just until butter melts.
- Spread cornmeal batter in pan.
- Bake for 10 minutes.
- Increase oven temperature to 375° and bake for 20-25 minutes more until lightly golden and toothpick inserted in center comes out clean.
- Cut into squares,
- Serve warm with butter and honey or homemade preserves.
