Ingredients

  • 1 lb. ground turkey
  • 3 jalapenos, chopped
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 clove garlic, minced
  • 2 (8 oz.) cans tomato sauce
  • 1 (12 oz.) can kernel corn, drained
  • 15 ripe olives, sliced
  • 1 Tbsp. sugar
  • 1 Tbsp. chili powder
  • 1/8 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup Cheddar cheese
  • 3/4 cup yellow cornmeal
  • 2 cups water
  • 1 tsp. baking powder
  • 1 Tbsp. oleo

Instructions

  1. Coat a large nonstick skillet with vegetable spray.
  2. Over medium heat, brown the ground turkey.
  3. Add chopped onion, green pepper, chopped jalapenos, and minced garlic to the skillet.
  4. Cook until tender.
  5. Stir in tomato sauce, sugar, chili powder, salt, pepper, drained kernel corn, sliced ripe olives.
  6. Simmer for 15 to 20 minutes.
  7. Stir in Cheddar cheese until melted.
  8. Spoon the meat mixture into an 8-inch square pan coated with oil spray.
  9. Combine yellow cornmeal, salt, and water in a saucepan.
  10. Bring to a boil, stirring constantly.
  11. Reduce heat and cook, stirring constantly for about 3 minutes.
  12. Stir in oleo (margarine).
  13. Spoon the cornbread mixture over the meat mixture, leaving about 1 inch of space at the edges.
  14. Bake at 375°F (190°C) for 40 minutes or until the topping is golden.
