Ingredients

  • 1 1/2 Tbsp. gelatin
  • 1/2 cup cold water
  • 1 can English peas and liquid
  • 3 hard-boiled eggs, chopped
  • 1/2 cup chopped celery
  • 1/2 Tbsp. chopped green peppers
  • 1 tsp. chopped onion
  • 1/2 cup mayonnaise
  • 1 small can evaporated milk
  • 1/2 tsp. salt
  • 2 Tbsp. vinegar
  • dash of Tabasco

Instructions

  1. Dissolve gelatin in cold water.
  2. Heat peas and liquid; add to gelatin and set aside.
  3. Mix chopped eggs, celery, green pepper, and onion together.
  4. Add mayonnaise, evaporated milk, salt, vinegar, and Tabasco to the vegetable mixture.
  5. Combine the vegetable mixture with the peas and gelatin mixture; mix well and add chopped corned beef.
  6. Pour into a dish or pan lined with waxed paper.
  7. Cover and chill for at least 2 hours.
  8. Cut into squares and serve on lettuce as a main dish.
