Ingredients

  • 1 small pkg. lemon jello
  • 12 oz. canned corned beef
  • 1/2 green pepper, chopped
  • 1 Tbsp. lemon juice
  • 1 c. chopped pecans
  • 1 c. salad dressing
  • 2 scant c. boiling water
  • 3/4 c. diced celery
  • 1/2 onion, grated
  • 3 boiled eggs, chopped
  • 1/2 tsp. salt

Instructions

  1. Mix the lemon jello and boiling water until the jello is dissolved.
  2. Fold in the remaining ingredients: canned corned beef, chopped green pepper, lemon juice, chopped pecans, salad dressing, diced celery, grated onion, chopped boiled eggs, and salt.
  3. Chill until the mixture is set.
  4. Use as a salad, sandwich spread, or hors d'oeuvre with crackers.
