Ingredients

  • 1 cup cornmeal
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/3 cup butter or margarine
  • 1/4 cup honey
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup buttermilk

Instructions

  1. Combine the dry ingredients: cornmeal, baking powder, salt, and flour.
  2. Blend eggs, buttermilk, melted butter or margarine, and honey until well mixed.
  3. Add the wet mixture to the dry ingredients and stir until just moistened.
  4. Pour the batter into a greased 8 x 8 x 2-inch baking pan.
  5. Bake in a 400°F oven for 30 minutes, or until the bread is golden brown and a toothpick inserted in the center comes out clean.
