Ingredients

  • 4 potatoes, pared and diced
  • 2 carrots, pared and thin sliced
  • 2 medium onions, sliced
  • several lettuce leaves
  • several celery leaves
  • 1/8 tsp. basil
  • 1 bay leaf
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 3 1/2 cups water
  • 2 cups light cream
  • butter (for topping)

Instructions

  1. In a saucepan, combine potatoes, carrots, onions, lettuce leaves, celery leaves, basil, bay leaf, salt, and pepper.
  2. Cover the mixture with cold water.
  3. Bring to a boil, then reduce heat and simmer, covered, for 1 hour.
  4. Pass the mixture through a food mill, strainer, or puree in a blender.
  5. Measure the puree; add 1 cup of light cream for every 3 cups of puree.
  6. Heat the soup thoroughly.
  7. To serve, top with a small lump of butter.
