Ingredients

  • 3 cups flour
  • 2 cups packed brown sugar
  • 1 1/2 cups plain yogurt or sour cream or 1/2 cup each
  • 3/4 cup oleo
  • 1 tablespoon cinnamon
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon ginger
  • 3 eggs

Instructions

  1. Grease and flour a Bundt or tube pan.
  2. Measure all ingredients into a large mixing bowl in order.
  3. Blend at low speed with a mixer until combined, then beat on high for 2 minutes, scraping the bowl occasionally.
  4. Bake at 350°F (175°C) for 55 to 60 minutes.
  5. Cool for 10 minutes in the pan.
  6. Remove from pan and sprinkle with powdered sugar if desired.
