Ingredients

  • 1/2 stick butter
  • 1 cup light brown sugar
  • 2 large eggs, separated
  • 2 1/3 cups flour
  • 1 1/4 cups buttermilk
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 15 pecan halves

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 13 x 9-inch glass baking dish.
  3. In a large bowl with a mixer at medium speed, mix butter, 1 cup packed light brown sugar, and egg yolks until blended.
  4. Reduce speed to low; beat in flour, buttermilk, baking soda, baking powder, cinnamon, vanilla, nutmeg, and cloves until well combined.
  5. In a separate bowl, beat egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter.
  7. Spoon the batter into the prepared baking dish.
  8. Arrange pecan halves on top of the batter.
  9. Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool slightly before serving.
