A hearty cowboy-inspired casserole combining rice, frankfurters, and vegetables with savory spices, perfect for family dinners and comfort food cravings.

Ingredients

  • 3/4 cup uncooked rice
  • 3 tablespoons cooking fat/oil
  • 1 1/2 teaspoons salt
  • 1 bay leaf
  • 3 whole cloves
  • 9 frankfurters
  • 2 onions
  • 1 (No. 2) can tomatoes
  • 1/2 whole green pepper
  • 1 tablespoon sugar

Instructions

  1. Cook rice until tender, then drain.
  2. Meanwhile, cook sliced onions in cooking fat/oil until tender.
  3. Add tomatoes, green pepper, salt, bay leaf, cloves, and sugar to the onions and simmer for 15 minutes.
  4. Remove bay leaf and cloves from the mixture.
  5. Add cooked rice to the onion and tomato mixture.
  6. Grease a 1 1/2-quart casserole dish.
  7. Arrange one-third of the rice mixture in the casserole.
  8. Top with one-third of the cut-up frankfurters.
  9. Repeat layers until all ingredients are used.
  10. Cover the casserole and bake at 325°F (163°C) for 1 hour.
  11. Uncover and bake for an additional 15 minutes.
