Ingredients

  • 1 lb. hamburger
  • 1 (16 oz.) can refried beans
  • 2 cans enchilada sauce
  • 1 pkg. tortillas
  • 1 can sliced mushrooms
  • 1 can diced tomatoes
  • 1 can cream of chicken soup
  • 26 oz. shredded cheese

Instructions

  1. Preheat oven to 350°F.
  2. Brown the hamburger in a skillet, then drain the fat.
  3. Mix the cooked hamburger, refried beans, enchilada sauce, sliced mushrooms, diced tomatoes, and sliced olives in a bowl.
  4. Spoon some of the mixture into each tortilla, fold them, and place in a baking pan.
  5. In a separate bowl, mix the cream of chicken soup with about 1.5 cups of water or milk.
  6. Pour the soup mixture over the assembled enchiladas.
  7. Sprinkle shredded cheese generously over the top.
  8. Bake uncovered for 20 to 30 minutes until hot and bubbly.
  9. Garnish with sour cream before serving.
