Instructions

  1. Soak tree ears in hot water until they inflate, about 5 minutes.
  2. Drain, rinse well and chop.
  3. Soak cellophane noodles with cold water until pliable, about 5 minutes.
  4. Drain and cut into 2-inch lengths using scissors.
  5. Mix ground pork, cooked crab meat, shredded carrot, shredded onion, salt, black pepper, m.s.g., chopped tree ears, and cut noodles in a large bowl.
  6. Coat each rice paper wrapper with hot water using a pastry brush and let stand a few moments to soften.
  7. Place a good tablespoon of filling into the center of a rice paper wrapper.
  8. Fold it up neatly and seal with egg white.
