Crab-stuffed sole features tender fish fillets filled with a creamy, cheesy crab mixture, perfect for a special dinner or seafood lover's delight.

Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 1/2 c milk
  • 1/3 c. sherry
  • 1/2 tsp. salt
  • 1 c. shredded Swiss cheese
  • 2 lb. sole fillets
  • salt and pepper
  • 1 medium onion, minced
  • 2 Tbsp. butter
  • 1 can (6 1/2 oz.) crab meat
  • 5 fresh mushrooms, cleaned and chopped

Instructions

  1. In a 4-cup glass measure, heat butter 30 seconds.
  2. Stir in flour, milk, sherry, and salt, blending well.
  3. Cook for 2 to 3 minutes, stirring every minute until thickened.
  4. Stir in cheese and set aside.
  5. Cut fish into serving-sized pieces and sprinkle with salt and pepper.
  6. Stuff the fish with the crab mixture, then bake or cook as desired.
