Ingredients

  • 1/2 cup cooked spinach
  • 1 egg
  • 1/4 cup wheat germ
  • 1/8 teaspoon nutmeg
  • sea salt to taste
  • 1 clove garlic
  • 4 large flounder fillets
  • 4 slices tomato

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix together cooked spinach, egg, wheat germ, nutmeg, salt, and chopped garlic.
  3. Spread the spinach mixture over each flounder fillet and roll up like a jellyroll.
  4. Secure the rolls with toothpicks and place them, rolled side up, in a buttered baking dish.
  5. Top each fillet with a slice of tomato.
  6. Brush the rolls with oil and bake for 20 minutes, or until the fish flakes easily.
