Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons grated orange peel
  • 2 tablespoons shortening
  • Juice from 1 orange
  • 1 1/2 cups shredded low-fat Cheddar cheese
  • 1 egg
  • 1 cup cranberries, halved

Instructions

  1. Heat oven to 350°F (175°C).
  2. Grease a 9 x 5 x 3-inch loaf pan.
  3. Measure flour, sugar, baking powder, soda, salt, and grated orange peel into a bowl.
  4. Cut in shortening until mixture resembles coarse crumbs.
  5. Add orange juice, cheese, and egg; mix well.
  6. Stir in halved cranberries.
  7. Pour batter into prepared loaf pan.
  8. Bake for 60 to 70 minutes or until a wooden pick inserted in the center comes out clean.
  9. Remove from oven and let the loaf stand for at least 8 hours before slicing.
