Ingredients

  • 1 lb vanilla wafers
  • 1/4 lb butter
  • 1 1/2 c confectioners sugar
  • 1 egg
  • 1 c ground raw apples peeled
  • 1 c ground raw cranberries
  • 1 c drained crushed pineapple
  • 1 c granulated sugar

Instructions

  1. Grind vanilla wafers to fine crumbs.
  2. Spread half of the wafer crumbs in a 9 x 13-inch pan.
  3. Cream butter and confectioners sugar until smooth.
  4. Add beaten egg and beat until creamy.
  5. Spread the creamed mixture over the wafer crumbs to the edge of the pan.
  6. Combine ground apples, ground cranberries, drained crushed pineapple, and granulated sugar; let stand for 20 minutes.
  7. Spread the fruit mixture over the creamed layer.
  8. Cover the fruit with whipped cream.
  9. Top with the remaining vanilla wafer crumbs.
  10. Chill for 12 to 24 hours before serving.
