Ingredients

  • 4 medium potatoes
  • 1 tsp salt
  • 2 Tbsp white vinegar
  • 2 Tbsp water
  • 3 Tbsp mayonnaise
  • 3 Tbsp sour cream
  • 2 Tbsp sweet relish
  • green olives
  • 1/2 tsp white pepper
  • green pepper slices
  • 1 Tbsp sugar
  • 2 hard-boiled eggs
  • 1 tsp prepared mustard
  • 2 to 3 green onions

Instructions

  1. Cook potatoes in salted boiling water until tender.
  2. Cool, peel, and dice the potatoes.
  3. Sprinkle with salt and a mixture of vinegar and water.
  4. In a bowl, combine mayonnaise, sour cream, sweet relish, chopped green onions, chopped hard-boiled eggs, mustard, sugar, and white pepper.
  5. Add the diced potatoes to the mixture and gently toss to coat.
  6. Garnish with sliced green peppers and green olives before serving.
