Instructions

  1. Sort and wash the dried red beans.
  2. Place the beans in a Dutch oven and cover with water to soak overnight.
  3. Drain the soaked beans.
  4. Add salt pork to the Dutch oven and cover with water, then cook for 45 minutes.
  5. Add chopped onions, chopped green onions, chopped parsley, chopped green pepper, pressed garlic, salt, red pepper, hot sauce, Worcestershire sauce, tomato sauce, dried oregano, and dried thyme to the beans.
  6. Cover and cook over low heat for 1 hour, stirring occasionally.
  7. Add sausage to the mixture and cook uncovered over low heat for 45 minutes, stirring occasionally.
  8. Serve the beans and sausage mixture over cooked rice.
