Ingredients

  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 3/4 cup chopped green pepper
  • 1/4 cup cooking oil
  • 2 pounds zucchini, sliced
  • 4 medium tomatoes, chopped
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook onion, garlic, and green pepper in hot oil in a skillet until soft.
  2. Add zucchini, chopped tomatoes, salt, and pepper.
  3. Cover and cook over medium heat for 20 minutes or until zucchini is tender.
  4. Serve topped with chopped fresh parsley and grated Parmesan cheese.
