Ingredients

  • 2 cups cooked chicken
  • 1 (10 1/2 oz.) can cream of mushroom soup
  • 3/4 cup mayonnaise
  • 1 cup diced celery
  • 1 cup cooked rice in chicken broth
  • 1 tablespoon lemon juice
  • 1 teaspoon grated onion
  • 1 (3 1/2 oz.) can sliced mushrooms, drained
  • 1/2 cup sliced almonds or water chestnuts
  • 1 cup crushed cornflakes
  • 3 tablespoons butter

Instructions

  1. Preheat oven and prepare a greased 2-quart casserole dish.
  2. Mix cooked chicken, cream of mushroom soup, mayonnaise, diced celery, cooked rice, lemon juice, grated onion, drained sliced mushrooms, and sliced almonds or water chestnuts in the casserole dish.
  3. Sprinkle crushed cornflakes over the mixture.
  4. Diced butter evenly over the crushed cornflakes.
