Ingredients

  • 10 large potatoes
  • 1 bay leaf
  • 1/2 cup melted margarine
  • 1/2 teaspoon salt
  • 10 oz can cream of chicken soup
  • 8 oz carton sour cream
  • 1/2 pound grated Cheddar cheese
  • 2 cups grated Cheddar cheese (reserve 1/2 cup)
  • 3 green onions chopped
  • pepper to taste

Instructions

  1. Boil potatoes with bay leaf until not too soft.
  2. Cool the potatoes.
  3. Peel and grate the potatoes on a coarse grater.
  4. Mix melted margarine into the cream of chicken soup, sour cream, grated Cheddar cheese, and chopped green onions.
  5. Add salt and pepper to the sauce and mix well.
  6. Pour the mixture into a baking dish.
  7. Sprinkle reserved Cheddar cheese and corn flakes on top.
  8. Bake until bubbly and golden brown.
