Ingredients

  • 1 Tbsp. shortening
  • 3/4 cup chopped nuts
  • 1 1/2 cups firmly packed brown sugar
  • 3/4 cup vegetable oil
  • 4 eggs
  • 1 1/2 cups all-purpose flour
  • 1 cup ground oat flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 3 cups shredded carrots
  • 1 cup walnuts or 3/4 cup raisins
  • Cream Cheese Frosting

Instructions

  1. Grease a 12-cup Bundt or 10-inch tube pan with shortening.
  2. Coat the greased pan with chopped nuts.
  3. In a large bowl, combine brown sugar and vegetable oil; mix well.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in all-purpose flour, ground oat flour, baking powder, salt, allspice, and cinnamon until just combined.
  6. Fold in shredded carrots and raisins or walnuts.
  7. Pour batter into the prepared pan, smoothing the top.
  8. Bake at 350°F (175°C) for about 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
  10. Frost with cream cheese frosting before serving.
