Crustless Broccoli Quiche

Ingredients

  • 10 oz. frozen broccoli spears or pieces
  • 2 eggs or egg substitute
  • 4 egg whites
  • 2 Tbsp. grated Parmesan cheese
  • 2 Tbsp. skim milk
  • 4 oz. low-fat Cheddar cheese, 1 inch chunks
  • dash of cayenne pepper
  • 1/2 cup diced onions
  • 2 tsp. soft margarine

Instructions

  1. Preheat oven to 350°F.
  2. Coat a 9-inch glass pie plate with nonstick spray.
  3. Steam broccoli for 5 minutes or until tender-crisp; drain well and set aside.
  4. Put eggs, Parmesan cheese, milk, Cheddar cheese, and cayenne in a blender and blend until smooth.
  5. Saute onions in margarine until translucent.
  6. Place onions in prepared pie plate.
  7. Add reserved broccoli over onions.
  8. Pour egg mixture over the broccoli and onions.
  9. Bake for 20 minutes or until a knife inserted halfway between center and outer edge comes out clean.
  10. Let stand for 5 minutes before serving.
