  • 1 Tbsp butter
  • 1 leek, washed well and chopped

  • 1 1/2 cups hot water
  • 1 cup heavy cream
  • 16 oz frozen broccoli, cauliflower, and red peppers, partially thawed
  • Juice of 1 lime
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3/4 lb peeled and deveined medium shrimp, thawed and well drained
  • 1/3 cup shredded coconut

Instructions

  1. In a 10-inch skillet, melt butter over medium heat.
  2. Add leek and cook, stirring 1 to 2 minutes, until soft.
  3. Stir in rice, garlic, and curry powder.
  4. Cook, stirring for 3 minutes.
  5. Stir in hot water and heavy cream.
  6. Heat to boiling over high heat, stirring occasionally.
  7. Reduce heat to low, cover, and simmer for 15 minutes.
  8. Remove cover and stir in frozen vegetables, breaking them up.
  9. Increase heat to medium, cover, and cook for 15 to 20 minutes, or until rice is tender.
  10. Stir in lime juice, salt, pepper, and shrimp.
  11. Cover and cook for 5 to 10 minutes longer, or until shrimp are pink and loosely curled, and vegetables are hot.
  12. Serve topped with shredded coconut and cashews.
