Ingredients

  • 8 oz. veal cutlet
  • 3 Tbsp. clarified butter
  • 2 Tbsp. flour
  • white wine
  • 2 tsp. minced shallots
  • 1 tsp. minced garlic
  • salt
  • white pepper
  • 4 to 5 oz. heavy cream
  • 1 tsp. pesto
  • 3-4 oz. sliced mushrooms
  • 3 oz. diced tomato
  • 4-5 oz. sea scallop
  • 6 each green shrimp
  • 2 oz. demi glace
  • 8 oz. fettucini noodles

Instructions

  1. In a hot saute pan, add clarified butter and lightly flour the veal cutlets.
  2. Add garlic, shallots, mushrooms, tomatoes, pesto, and white wine to the pan to prevent browning.
  3. Add seafood (scallops and shrimp), sprinkle flour lightly across the pan, and incorporate well.
  4. Add white wine if needed to adjust thickness, then add demi glace and heavy cream.
  5. Cook for a minute or two, season to taste with salt and white pepper.
  6. Serve the sauce over cooked fettucini noodles or wild rice blend if desired.
