Ingredients

  • 16 oz. frozen broccoli
  • 10 oz. frozen spinach
  • 1 medium onion
  • 1/2 cup stuffed green olives
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 2 cups cooked brown rice
  • Sharp cheddar cheese
  • Whole wheat crackers

Instructions

  1. Cook the broccoli and spinach; drain and place in a large mixing bowl.
  2. Add chopped onion, cooked brown rice, and green olives; mix thoroughly.
  3. Mix the cream of chicken and mushroom soups with sour cream; add to the vegetable mixture and combine well.
  4. Pour the mixture into a large greased casserole dish.
  5. Top with shredded sharp cheddar cheese.
  6. Crush whole wheat crackers and sprinkle over the top.
  7. Bake in a 325°F (160°C) oven for approximately 45 minutes until bubbly and golden.
