Ingredients

  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts
  • 1 cup Wesson oil
  • 1 teaspoon vanilla
  • 1 1/2 cups sugar
  • 2 cups grated carrots
  • 3 eggs
  • 1 cup raisins or 1/2 cup shredded coconut and 1/2 cup raisins

Instructions

  1. Sift flour, salt, baking soda, and cinnamon together in a mixing bowl.
  2. Make a well in the dry ingredients and add nuts, oil, vanilla, sugar, eggs, carrots, and optional raisins or coconut.
  3. Pour the batter into a well-greased 9 x 5 x 3-inch loaf pan.
  4. Let stand about 20 minutes before baking.
  5. Bake at 350°F (175°C) for about 1 hour.
