Ingredients

  • 2 cups chopped dates
  • 1 cup chopped walnuts
  • 1/3 cup shortening
  • 1 cup boiling water
  • 1/3 cup cold water
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/4 teaspoon salt

Instructions

  1. Combine chopped dates, chopped walnuts, and shortening in a mixing bowl.
  2. Add boiling water and cold water to the mixture.
  3. Stir in brown sugar, well-beaten egg, and vanilla extract.
  4. Sift together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the date mixture, mixing well.
  6. Pour the batter into a greased large loaf pan.
  7. Bake at 350°F (175°C) for 1 hour and 15 minutes or until done.
  8. Allow to cool for 10 minutes before removing from the pan.
