Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup whole wheat pastry flour
  • 3/4 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1/2 to 1 teaspoon ground cinnamon
  • 2 egg whites
  • 2/3 cup buttermilk
  • 1/3 cup unsweetened applesauce
  • 2/3 cup chopped dates
  • 2/3 cup chopped nuts (pecans or walnuts)

Instructions

  1. Preheat oven to 400°F.
  2. Spray muffin cups with no-stick spray.
  3. In a large bowl, combine all-purpose flour, whole wheat pastry flour, brown sugar, baking powder, and ground cinnamon.
  4. In a separate bowl, whisk egg whites, buttermilk, and unsweetened applesauce.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in chopped dates and chopped nuts.
  7. Divide the batter evenly among the prepared muffin cups.
  8. Bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow muffins to cool slightly before removing from the pan.
