Ingredients

  • 1 1/4 cups water
  • 1 cup chopped dates
  • 1 stick margarine
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 teaspoon soda
  • 18 packets Equal
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup chopped prunes
  • 1/2 cup raisins
  • 2 eggs
  • chopped nuts (optional)

Instructions

  1. Combine water, chopped dates, chopped prunes, and raisins in a pot. Boil for 10 minutes or until water is absorbed. Add margarine and let cool.
  2. In a separate bowl, mix eggs and vanilla, then add to the cooled fruit mixture.
  3. Add flour, soda, Equal sweetener, cinnamon, nutmeg, and salt to the mixture. Mix well.
  4. Spread the batter in a greased pan and sprinkle with chopped nuts if desired.
  5. Bake at 350°F (175°C) for 35 minutes or until done.
