Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 3/4 teaspoon lemon pepper
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon onion powder
  • 1 cup milk
  • 1 egg
  • 1 pound fresh zucchini
  • butter for frying
  • grated Parmesan cheese

Instructions

  1. In a medium mixing bowl, combine 1 cup all-purpose flour, cornstarch, baking powder, salt, lemon pepper, onion powder, milk, and egg.
  2. Blend until smooth.
  3. Refrigerate for at least 30 minutes.
  4. Cut zucchini into 1/4-inch diagonal slices.
  5. Rinse and pat dry.
  6. Shake slices in remaining 1/2 cup flour to coat.
  7. Heat butter in a frying pan.
  8. Deep-fry coated zucchini slices until golden brown.
  9. Remove and drain on paper towels.
  10. Sprinkle with grated Parmesan cheese before serving.
