Ingredients

  • 16 oz. package Del Sol vegetables, thawed
  • 1 small can mushrooms, drained
  • 1 large onion, chopped
  • 1 clove garlic
  • 4 Tbsp. butter
  • 6 eggs
  • 2 c. ham, cubed
  • 2 c. grated cheese
  • 1/2 c. Parmesan cheese
  • 1/2 tsp. basil
  • salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Saute vegetables, onion, mushrooms, and garlic in butter for 5 to 7 minutes.
  3. Beat eggs in a large bowl. Add ham, grated cheese, Parmesan cheese, basil, salt, and pepper.
  4. Combine the sautéed vegetables with the egg mixture and mix well.
  5. Pour the mixture into a greased 9 x 13-inch pan.
  6. Bake for 45 to 55 minutes or until eggs are puffed and set.
