Ingredients

  • 1/2 cup concentrated apple juice
  • 2/3 cup cider vinegar
  • 1 teaspoon salt or substitute
  • 1 teaspoon celery seed
  • 1/2 teaspoon mustard seed
  • 1 cup coarsely grated cabbage
  • 1 cup minced canned beets
  • 1/4 cup minced onion

Instructions

  1. Combine apple juice, cider vinegar, salt, and seeds in a saucepan.
  2. Bring to a boil and cook for 5 minutes.
  3. Stir in the grated cabbage, minced canned beets, and minced onion.
  4. Lower heat and simmer for 10 minutes.
  5. Pour the mixture into sterile 1/2 pint jars, leaving 3/4 inch at the top.
  6. Cap with sterile lids and process in boiling water bath for 5 minutes after water returns to boiling.
