Ingredients

  • 3 cups sugar
  • 1 cup salad oil
  • 4 eggs
  • 2 cups cooked mashed pumpkin
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons salt
  • 2 teaspoons soda
  • 1/2 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground allspice
  • 2/3 cup water
  • 1 to 1 1/2 cups chopped pecans (optional)

Instructions

  1. Combine sugar, oil, and beaten eggs; beat until light and fluffy. Stir in pumpkin.
  2. Combine dry ingredients; stir into pumpkin mixture.
  3. Add water and chopped pecans (optional), mixing well.
  4. Spoon batter into 2 well-greased 9 1/4 x 5 1/4 x 2 3/4-inch loaf pans.
  5. Bake at 350°F (175°C) for 65 to 75 minutes.
