Ingredients

  • 4 to 6 medium pork chops
  • 1 large onion, chopped
  • 1 (14 oz.) can whole tomatoes
  • 1/2 bell pepper, chopped
  • 1 rib celery, chopped
  • 1/2 cup green onion tops, chopped
  • 1/2 cup parsley, chopped
  • salt and pepper to taste
  • 2 (6 oz.) packages wild rice

Instructions

  1. Brown pork chops and chopped onion in a large skillet.
  2. Add chopped bell pepper, chopped celery, chopped green onion tops, and chopped parsley.
  3. Cook for 20 minutes over low heat.
  4. Add wild rice along with half the water called for on the package.
  5. Stir well.
  6. Cover and cook for 30 minutes until the liquid is gone.
