Deviled Lamb Shanks

Ingredients

  • 1 Tbsp. olive oil
  • 1 large onion
  • 1 Tbsp. ketchup
  • 1/2 tsp. salt
  • 1 Tbsp. Worcestershire sauce
  • 4 lamb shanks (3/4 to 1 lb. each)
  • 2 cloves garlic
  • 2 Tbsp. Dijon mustard
  • 1/4 tsp. ground pepper
  • 1 cup cider or apple juice

Instructions

  1. In a 5-quart Dutch oven or heavy saucepan, heat olive oil and brown lamb shanks on all sides, removing them to make room for others as they are browned.
  2. Add chopped onions and pressed garlic to the pan and sauté until onions are golden.
  3. Stir in ketchup, Worcestershire sauce, Dijon mustard, salt, ground pepper, and cider or apple juice.
  4. Return lamb shanks to the Dutch oven, turning to coat them with the sauce.
  5. Bring the mixture to a boil.
  6. Cover and reduce heat to simmer for 1 1/2 to 2 hours, or until lamb is tender.
  7. Remove the cover and cook over medium heat until the sauce thickens and coats the lamb shanks, about 20 minutes.
  8. If there is excess fat on top of the sauce, spoon it off before reducing the sauce.
