Ingredients

  • 1/2 cup Wesson oil
  • 1 cup brown sugar
  • 2 eggs
  • 3 cups plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon vanilla extract
  • 4 cups tart apples, diced fine

Instructions

  1. Put oil, sugar, and beaten eggs into a bowl.
  2. Sift together flour, spices, and baking powder.
  3. Add the sifted dry ingredients to the bowl with wet ingredients and mix well.
  4. Add vanilla extract and diced apples last, folding gently to combine.
  5. Turn the batter into a greased angel food pan.
  6. Bake at 325°F (160°C) for about 1 hour, or until a toothpick inserted into the center comes out clean.
  7. Dust with confectioners sugar just before serving.
