Ingredients

  • 1 cup chopped prunes
  • 1 cup raisins
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cups boiling water
  • 2 cups flour
  • 1/2 cup chopped nuts
  • 8 small packages Equal

Instructions

  1. Mix chopped prunes, raisins, vanilla, soda, and boiling water in a bowl.
  2. Set the mixture aside to cool.
  3. In a separate bowl, combine flour, chopped nuts, and Equal sweetener.
  4. Once the prune mixture is cold, stir in the flour mixture until well combined.
  5. The dough will be very stiff; do not add any more moisture.
  6. Spray two loaf pans with nonstick vegetable cooking spray.
  7. Divide the batter evenly into the prepared loaf pans.
  8. Bake at 300°F (150°C) for 1 hour.
