- Mix chopped prunes, raisins, vanilla, soda, and boiling water in a bowl.
- Set the mixture aside to cool.
- In a separate bowl, combine flour, chopped nuts, and Equal sweetener.
- Once the prune mixture is cold, stir in the flour mixture until well combined.
- The dough will be very stiff; do not add any more moisture.
- Spray two loaf pans with nonstick vegetable cooking spray.
- Divide the batter evenly into the prepared loaf pans.
- Bake at 300°F (150°C) for 1 hour.
