Ingredients

  • 1 Tbsp. oil
  • 1 large onion, chopped
  • 1 c. Kasha
  • 2 c. water
  • 2 tsp. salt
  • 1 lb. fresh spinach or 2 boxes frozen spinach
  • 1 c. unsalted peanuts
  • 2 eggs
  • 1/4 tsp. pepper or 1/2 tsp. Tabasco

Instructions

  1. Heat oil in a large skillet; sauté chopped onion and Kasha until onion is transparent.
  2. Add water and 1/2 teaspoon salt; bring to a boil, then cover and reduce heat.
  3. Cook for about 15 minutes, until water is absorbed.
  4. Cook spinach and place in a blender with peanuts and one egg; process on high until creamed, nuts should be coarse.
  5. Lightly beat the other egg; add spinach mixture, cooked Kasha, salt, and pepper; blend well.
  6. Pour mixture into a well oiled 9 x 5 x 3-inch pan.
  7. Bake at 350°F (175°C) for 55 minutes.
  8. Cool for 5 to 10 minutes before serving.
