Ingredients

  • 3 cups flour
  • 1 1/2 cups cooking oil
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 eggs
  • 2 cups sugar
  • 2 cups bananas, diced
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons vanilla
  • 1 (8 oz.) can crushed pineapple
  • 2 cups nuts (optional)

Instructions

  1. Combine all dry ingredients in a bowl.
  2. Add eggs and cooking oil and stir by hand until well mixed.
  3. Stir in vanilla, crushed pineapple, diced bananas, and nuts (if using).
  4. Pour the batter into a greased and floured pan.
  5. Bake at 350°F (175°C) for 25-30 minutes, or 40-45 minutes if using a bundt pan.
  6. Allow the cake to cool before applying your choice of icing.
