Ingredients

  • 3 slices bacon
  • 1 medium onion, finely chopped
  • 1 teaspoon paprika
  • 1 pound sauerkraut, chopped
  • 1/2 bay leaf
  • sour cream
  • 3/4 cup egg barley
  • 1 tablespoon flour
  • 8 cups beef stock
  • 1 teaspoon salt
  • 1/2 pound Hungarian sausage, cut into 1/2-inch slices

Instructions

  1. In a large kettle, sauté bacon until crisp; set aside.
  2. Pour off all but 2 tablespoons of fat from the kettle.
  3. Add egg barley and sauté until very lightly browned.
  4. Add finely chopped onion and continue to cook until onion is tender and barley is lightly browned.
  5. Stir in flour, paprika, and 1 cup of beef stock.
  6. Cook over low heat until most of the liquid is absorbed.
  7. Add the remaining beef stock, chopped sauerkraut, crumbled bacon, salt, and bay leaf; simmer for 1 1/2 hours.
  8. Add sausage slices and cook for an additional 20 minutes.
  9. Garnish each bowl with a dollop of sour cream.
