Ingredients

  • 4 cups milk
  • 1 cup cornmeal
  • 3 eggs
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 small onion
  • 1 1/2 cups shredded cheese
  • 1/4 cup melted butter

Instructions

  1. Mix milk and cornmeal in a pan.
  2. Cook and stir over medium heat until thick.
  3. Stir the mixture into beaten eggs.
  4. Add salt, pepper, chopped onion, and 1 1/2 cups shredded cheese.
  5. Pour into a baking pan so the mixture is about 1 1/2 inches thick and chill.
  6. Remove from pan and cut into pieces.
  7. Place on a greased baking sheet; brush with melted butter and sprinkle with remaining cheese.
  8. Bake at 350°F for about 20 minutes, until lightly browned.
