A fresh, crunchy cabbage slaw with a tangy Asian-inspired dressing, peanuts, and peas, perfect for light lunches, picnics, or as a side dish for Asian-themed meals.

Ingredients

  • 2 Tbsp. wine vinegar
  • 2 tsp. soy sauce
  • 1 tsp. grated ginger
  • 1/4 tsp. minced garlic
  • 1/2 tsp. salt
  • 1/3 cup oil
  • 1 head cabbage (3 lb.)
  • 6 oz. frozen peas, thawed
  • 1/2 cup chopped peanuts (optional)

Instructions

  1. In a small jar, combine the wine vinegar, soy sauce, grated ginger, minced garlic, and salt.
  2. Shake until the salt dissolves.
  3. Add the oil and shake again to combine.
  4. Shred the cabbage.
  5. A few hours before serving, combine the shredded cabbage, thawed peas, and dressing in a large bowl.
  6. Toss to combine.
  7. Optional: add 1/2 cup chopped peanuts.
