A hearty layered vegetable casserole featuring eggplant, zucchini, squash, peppers, and tomatoes topped with cheese and bread crumbs, perfect for a comforting vegetarian main or side dish.

Ingredients

  • 1 fairly small eggplant unpeeled
  • 1 medium onion sliced
  • 1 medium zucchini sliced
  • 1 medium yellow squash sliced
  • 1 green pepper sliced in circles
  • 1 or 2 peeled and sliced tomatoes
  • 1 cup grated cheese
  • 1 clove minced garlic or garlic salt
  • 1 cup bread crumbs

Instructions

  1. Layer eggplant, onion, zucchini, yellow squash, green pepper, sliced tomatoes, and grated cheese in a large casserole dish, sprinkling seasoning 2 or 3 times during layering.
  2. Cover the layered vegetables with buttered bread crumbs.
  3. Bake at 350°F for at least 45 minutes until cooked through and golden on top.
