Ingredients

  • 1 medium eggplant
  • 1 lb. ground beef
  • 1 c. chopped onion
  • 16 oz. can tomatoes
  • 1 tsp. basil
  • 1 1/2 tsp. salt
  • pepper
  • 1/4 tsp. garlic powder
  • 1 c. shredded Mozzarella cheese
  • 3 c. hot cooked rice
  • grated Parmesan cheese

Instructions

  1. Peel and cook the eggplant in salt water until tender; drain.
  2. Brown the ground beef and chopped onion in a skillet.
  3. Stir in the cooked eggplant, canned tomatoes, basil, salt, pepper, and garlic powder.
  4. Transfer the mixture to a casserole dish.
  5. Sprinkle with shredded Mozzarella cheese.
  6. Bake in the oven until the cheese is melted and bubbly, about 20 minutes.
  7. Serve the casserole over hot cooked rice, sprinkled with grated Parmesan cheese.
