- Cut the bottom part of the eggplant with stalk to discard it. Wash the eggplant and microwave it on high for 9 minutes to cook.
- Drain the water using a colander and peel the eggplant.
- Mash the peeled eggplant thoroughly.
- Cut the tomato into small pieces, and mince the onion and garlic.
- Mix the mashed eggplant with the chopped tomato, minced onion, and garlic.
- Add oil, salt, sugar, and black pepper, and mix well.
- Garnish with coriander leaf if desired and serve.
