Eggplant Bhorta

Ingredients

  • 1 large eggplant
  • 1 tomato
  • 1 small onion
  • 1 clove garlic
  • 1 1/2 Tbsp. oil
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/4 tsp. black pepper
  • coriander leaf (optional)

Instructions

  1. Cut the bottom part of the eggplant with stalk to discard it. Wash the eggplant and microwave it on high for 9 minutes to cook.
  2. Drain the water using a colander and peel the eggplant.
  3. Mash the peeled eggplant thoroughly.
  4. Cut the tomato into small pieces, and mince the onion and garlic.
  5. Mix the mashed eggplant with the chopped tomato, minced onion, and garlic.
  6. Add oil, salt, sugar, and black pepper, and mix well.
  7. Garnish with coriander leaf if desired and serve.
