Ingredients

  • 1 lb. ground beef
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery (optional)
  • 1 (8 oz.) can tomato sauce
  • 1/2 cup water
  • 3/4 teaspoon oregano
  • 3/4 teaspoon chili powder
  • 1 small eggplant, cut into 1/2-inch slices
  • 1 cup shredded sharp Cheddar cheese
  • paprika
  • Parmesan cheese

Instructions

  1. Cook ground beef, chopped onion, and chopped celery until the meat is browned.
  2. Drain off extra fat from the skillet.
  3. Stir in tomato sauce, water, oregano, and chili powder.
  4. Season eggplant slices with salt and pepper.
  5. Arrange eggplant slices on top of the meat sauce.
  6. Cover and simmer until eggplant is tender, about 15 to 20 minutes.
  7. Top with shredded Cheddar cheese and heat until cheese is melted.
  8. Sprinkle with paprika and Parmesan cheese before serving.
