Ingredients
- 1 1/2 lb ground beef ⓘ
- 3 Tbsp flour ⓘ
- 2 to 3 Tbsp chili powder ⓘ
- 1 tsp ground cumin ⓘ
- 1/2 tsp salt ⓘ
- 1/2 tsp garlic powder ⓘ
- 1 onion, finely chopped (optional)
- chopped or sliced jalapeno (optional) ⓘ
- 1 large can enchilada sauce ⓘ
- 1 small can chopped chili ⓘ
- 1 small can black olives ⓘ
- 5 to 6 large flour or corn tortillas ⓘ
Instructions
- Brown the ground beef with onions if using, then drain off excess oil.
- Add flour, chili powder, cumin, salt, and garlic to the beef mixture.
- Mix well, then add water and cook on low heat until the mixture thickens.
- Taste the mixture and adjust chili powder if needed to achieve a taco seasoning flavor.
- Fill tortillas with the beef mixture, roll them up, and place in a baking dish.
- Pour enchilada sauce over the assembled enchiladas, and top with chopped chili and black olives if desired.
- Bake in the oven until heated through and bubbly. Serve hot.
