Ingredients

  • 20 oz. frozen sliced carrots
  • 1 small onion, diced
  • 1 cup butter
  • 1 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon dry mustard
  • 2 cups milk
  • 1/8 teaspoon ground pepper
  • 1/4 teaspoon celery salt
  • 1/2 cup Velveeta cheese, sliced
  • 2-3 cups buttered bread crumbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook carrots in salted water until tender.
  3. Cook diced onion in butter for 2-3 minutes.
  4. Stir in flour, salt, dry mustard, and milk; cook until smooth.
  5. Add ground pepper and celery salt to the sauce.
  6. In a 2-quart casserole, arrange layers of cooked carrots and sliced Velveeta cheese.
  7. Pour the mustard mixture over the layered ingredients.
