Ingredients

  • 1 lb. Brazil nuts or pecans (1 3/4 cups)
  • 1 lb. walnuts (2 1/4 cups)
  • 1 lb. dates (3 cups)
  • 1 1/2 cups sugar
  • 1 1/2 cups cake flour
  • 1 tsp. baking powder
  • pinch of salt
  • 3 3/4 oz. red maraschino cherries
  • 3 3/4 oz. green maraschino cherries
  • 5 eggs

Instructions

  1. Do not chop nuts or dates; leave them whole. Pour sugar over nuts and dates.
  2. Sift together the sugar, cake flour, baking powder, and salt.
  3. Add the red and green maraschino cherries along with their juice to the mixture.
  4. Separate 5 eggs; add the beaten egg yolks to the mixture.
  5. Beat the egg whites until stiff and fold them into the batter last.
  6. Grease two loaf pans well and divide the batter between them.
  7. Bake at 325°F (163°C) for 1 hour and 15 minutes until cooked through.
